CHRISTMAS EVE RUSH..

YES… for some it is rush day. On the news they told of many malls

that were staying open 24 hours a day to try to gather more

sales before the big day. I heard one man say he shopped at

2 or 3 in the morning and then went home to bed. It was

really easy and no crowds.

I am sure the retailers are thinking of any way they can

compete with the on line sales this year. Nothing is more

convenient than just staying home and doing it all in your

PJ’s, sipping your favorite drink at the click of a fingertip.

Our gifts are “BAGGED” this year. NOTHING is wrapped

the old fashioned way. Mom has taken to stapling the tops

of the bags together to keep prying eyes from the contents.

We got our main gift back in OCT. when we bought the digital

photo frame viewer. I love it and have used it a lot. One thing

though.. make sure the one you buy is capable of playing your

videos on it too and has sound. OURS DOESN’T.. I had

no idea when I got it and now I wish it had it. Would love to view

the wedding that way. Live and learn I guess.

It is cold and windy here and no snow..just some flurries. To the

north of me they are getting nearly 8 inches of the white stuff and

many days of lake effect snow sqalls. At one time the wind blew

to white out, no visbility conditions along the lake shore roads. GLAD I am

no where near there.

Today I will be preparing my side dishes that I can do

ahead of time, and a pie. I got a request for the “green jello salad”

I make it sometimes, but I had thought of not doing it

this year. I guess mom could maybe have one spoonful

though. I made her some sugar free jello, she loves it.

The salad I make originated in California with one

of the relatives. It had horseradish in it and was more

of a vegetable salad with onions and celery etc.

The more the recipe got passed

around the more it changed. Now it is more of a creamy

sweeter type salad..It goes over really well and can be

molded into any shape.

CREAMY LIME JELLO SALAD

1 small pkg lime jello….  dissolve in 1 cup of boiling water

let this cool some before adding the milk.

1 cup milk.. 1/2 or 2 % is best

1  8 oz can crushed pineapple (drained)

1  16 oz carton cottage cheese

1/2 c. miracle whip  (must use this)

8 oz carton cool whip ( thawed)

1/2 c. chopped pecans or walnuts

1 c. sour cream ( can omit this if you want)

Mix all above and pour into mold or dish

Recipe can be doubled Sets rather quickly

Ready in about 3 hours. Serves at least 6.

I have used some minature marshmallows in this too

dissolved in the warm jello.. I found it to be too sweet

though..so I left them out .. no one noticed it. Open-mouthed
