HAPPY NEW YEAR 2013

When I look back on 2012 I will remember some pretty hard times for many and some tragic times for some too. I sure hope that 2013 will be a whole lot better for all of us. I know the forecast doesn’t sound too great what with a “fiscal cliff” looming and prices skyrocketing, I’m just hoping it won’t be as bad they have predicted. A FIVE MINUTE EASY FUDGE..Yes it is possible.. tastes great too!!

RACHAEL RAY’S 5 minute FUDGE!!

This super-simple recipe will be a hit at your holiday party!
Try all three varieties: the Chunky Chocolate Fudge Wreath with
Walnuts and Currants, the White Chocolate Wreath with
Pistachio and Cranberry or the Goober and Raisinette Wreath!
This can also be made in a 8×11 biscuit pan and cut into squares.

INGREDIENTS
12 ounce package semisweet chocolate chips { I ALSO USE milk chocolate chips}
1 cup butterscotch chips {I have used white chips and the swirl chips}
14 ounce can sweetened condensed milk (save the can)
1 teaspoon pure vanilla extract
8 ounce can walnuts, plus more for topping
1/2 cup raisins or dried currants (a couple of handfuls)
candied red and green cherries to decorate top (like holly)
softened butter to grease an 8 inch round cake pan

Five-minute fudge wreaths

INGREDIENTS
  • 12 ounce package semisweet chocolate chips { I ALSO USE milk chocolate chips}
  • 1 cup butterscotch chips  {I have used white chips and the swirl chips}
  • 14 ounce can sweetened condensed milk (save the can)
  • 1 teaspoon pure vanilla extract
  • 8 ounce can walnuts, plus more for topping
  • 1/2 cup raisins or dried currants (a couple of handfuls)
  • candied red and green cherries to decorate top (like holly)
  • softened butter to grease an 8 inch round cake pan
  1. Grease an 8-inch round cake pan with softened butter. Pour the chocolate and butterscotch chips, condensed milk and vanilla into a medium saucepan. Put the pan on the stove and turn the heat to low.
  2. Cover the empty condensed milk can with plastic wrap and put it in the center of the round cake pan.

WINTER COMES..

100_1284Wonderful view of the sunset tonight..we have had several days of warm temps and really enjoyed it. December is here but we are cherishing every day we can, the winters are long enough. 100_1286     100_1289

 

100_1288zz   The squirrels were busy today gathering.  I watched them running up and down the old walnut tree. I wondered if this was another sign that the cold was coming soon. They kept to their task way into the day. On my walk I observed the neighbor’s yard filled with Christmas decorations, but the air smelled of early fall.  It seemed too soon for the holiday, but really only 3 weeks away. I thought of those in New Jersey and New York and areas where Sandy fell hard on them. How many are still homeless, where will their Christmas be?  I said a silent prayer for them all. In this season of Peace On Earth..I do hope we find it soon. Looking forward to 2013 being a good year for us all.
